Note: Both Kathy and I remember growing up with salmon patties on the menu. Here is a new rendition based on old memories, adding the smoked salmon for a special treat.
- 1 can salmon (before mixing, bone the salmon)
- 2-3 oz. smoked salmon (we smoke our own, but try one of the upscale markets for their version; this adds a great ambiance to the patties)
- 1/2 medium onion, minced
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, minced
- 2 eggs, beaten
- 1 teaspoon Old Bay seasoning
- 1 fern fresh dill, minced
- Salt and pepper to taste
- 2 tablespoons butter
- 3-4 tablespoons olive oil
Directions
- Beat eggs
- Mix canned (remember to bone) and smoked salmon
- Best to start using two forks and flaking the salmon
- Mix in eggs
- Mix dry ingredients
- Mix dry ingredients into salmon/egg mixture
- Make into patties
- Heat olive oil and butter over medium heat and cook
