Note: There are thousands of pancake recipes floating around, but this one from our old Betty Crocker cookbook, slightly modified, remains our favorite. We have been fixing this recipe for nearly 50 years.
1 egg
1 cup buttermilk
2 tablespoons butter, melted
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla
Beat egg, add remaining ingredients in order listed and beat with rotary beater until smooth.
Grease heated griddle, if necessary. Pour batter using large spoon or ladle on to the hot griddle. Turn pancakes when top puffs and is full of bubbles but before bubbles break. Bake second side until golden brown.
Makes 10 four inch pancakes. Doubling or tripling the recipe is easy.
