Ingredients
- Chicken for the number of diners – we use two tenderloins for each person, and we prefer white meat; adjust as you desire
- 1-3 eggs, depending on amount of chicken
- All-purpose flour, adjust depending on amount of chicken
- 1 cup seasoned bread crumbs
- salt and pepper to taste
- 1 teaspoon paprika
Directions
- Preheat oven to 350°
- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
- Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated.
- Spray baking dish with non-stick, place a grate in the dish to keep the chicken off the bottom.
- Add the chicken to the dish and sprinkle with paprika to taste.
- Baking time depends on the cut of chicken used. For tenderloins, cook for 30 minutes and check. By using the grate, you do not have to turn the chicken.
