Manicotti

Note: We have no idea of the origin of this recipe. It came from long, long ago in Alpine. The original recipe called for only ground beef, but we like the extra flavor from the Italian sausage.

Ingredients

½ lb ground beef, lean
½ lb ground Italian sausage (sweet, mild or hot, your choice)
1 clove garlic minced
½-1 medium onion chopped
1 pt ricotta cheese (cottage cheese can be substituted)
1 ½ cups of mozzarella cheese, shredded
½ teaspoon fresh oregano, chopped finely
½ teaspoon fresh parsley, chopped finely
½ teaspoon fresh dill, chopped finely
½ cup mayonnaise
1 box manicotti pasta, cooked and drained
1 16 oz jar spaghetti sauce (or use your own, homemade sauce)
Parmesan cheese to top

Directions

  • Brown meat, onion and garlic; drain, add herbs and leave on warm burner for about 10 minutes, drain as needed
  • In a separate bowl, mix ricotta cheese, mozzarella cheese, and mayonnaise
  • Combine both meat and cheese mixture
  • Stuff manicotti pasta as full as possible
  • Place in baking dish (spray first with non-stick cooking spray)
  • If there is meat/cheese mixture left over, sprinkle over the manicotti
  • Cover with sauce, sprinkle parmesan cheese or your favorite Italian cheese on top, cover with foil and cook 20-30 minutes to heat
