Lobster and shrimp

Serves 2 – a great special dinner for two on a special occasion.

Note: I have to admit, the original base recipe for this came from somewhere on the Internet. If this resembles a recipe you have posted, please let me know so I can give you credit.

Ingredients

  • 1 lobster tail (If you feel adventuresome, cook a whole lobster)
  • 8 raw shrimp, we prefer the 10/15 (peeled and deveined)
  • 2 tbsp water
  • 3 tablespoons yellow onion
  • 8 tablespoons salted butter (cut into 1 tbsp chunks)
  • 2 cloves garlic (finely minced)
  • 2 tomatoes (cut into large chunks)
  • 2 fresh basil leaves, coarsely chopped
  • two tablespoons cream (I prefer heavy cream; my wife prefers half and half)

Directions:

  1. Remove all lobster meat from shell and cut into large chunks.
  2. In a sauce pan, bring 2 tbsp water to simmer over medium-low heat. Whisk in butter one piece at a time, letting each piece melt before adding the next.
  3. Sauté onion and garlic in butter until soft.
  4. Add the lobster, shrimp, basil, cooking on medium heat for 2-3 minutes, stirring constantly. Do not overcook, or the lobster and shrimp will be tough
  5. Add tomatoes and cook for another 2 minutes.
  6. Add cream, stir in and serve.
  7. Serve over homemade pasta. If you feel adventuresome, you can serve them with yellow corn cheese grits.
