Italian meat bites

Note: Start with the Italian meat loaf mix. Unless you are feeding a good sized bunch, you will have some of the  mix left over. You can use it for a small meat loaf, stuffed bell peppers or meatballs. For us, two of the meat bites makes a meal.

Ingredients

  • Italian meat loaf mix
  • Thick cut pepperoni, chopped (we get ours in the Deli with a #6 cut)
  • Grill Italian sausage (we like the sweet or mild), cut in rounds, 1 round for each meat bite
  • Marinara sauce to cover
  • Mozzarella cheese, a pinch for each meat bite
  • Parmesan cheese, a pinch for each meat bite

Directions

  • You will need a muffin tin, we use the 12-muffin tin to make the meat bites a little smaller
  • After you mix the Italian meat loaf, form a ball and mold into the muffin tin making a small bowl
  • Build up from the bottom of the meat bowl:
    • A pinch of mozzarella cheese
    • Several pepperoni chunks
    • A round of Italian sausage
    • A pinch of parmesan cheese
    • A spoon full of marinara for topping
  • Preheat oven to 400, cook for 20 minutes
