Ingredients
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 2 teaspoons minced fresh ginger root
- vegetable oil
- Veggies of your choice: Bok Choy, Broccoli, Cauliflower, etc
- Handful of snow peas
- 4-6 baby carrots quartered lengthwise
- 2 tablespoons soy sauce
- 3 tablespoons water
- ½ medium onion, chopped
Directions
- In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in all veggies except onion, tossing to lightly coat.
- Heat 2 tablespoons oil in a large wok over medium heat.
- Add onion, cooking 2-3 minutes.
- Add remaining veggies, including remaining ginger, cooking another 2-3 minutes, stirring constantly
- Add soy sauce and water, cooking until mixture thickens; do not overcook.
