Ginger-veggie stir fry

Note: Started with an allrecipes.com recipe as base and added our favorite veggies. They have a great site with great recipes.

Ingredients 

  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger root
  • vegetable oil
  • Veggies of your choice: Bok Choy, Broccoli, Cauliflower, etc
  • Handful of  snow peas
  • 4-6 baby carrots quartered lengthwise
  • 2 tablespoons soy sauce
  • 3 tablespoons water
  • ½ medium onion, chopped

Directions

  1. In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in all veggies except onion, tossing to lightly coat.
  2. Heat 2 tablespoons oil in a large wok over medium heat.
  3. Add onion, cooking 2-3 minutes.
  4. Add remaining veggies, including remaining ginger, cooking another 2-3 minutes, stirring constantly
  5. Add soy sauce and water, cooking until mixture thickens; do not overcook.
