Note: The original version came from CrockPot’s slow cooker cookbook. We have tweaked it a little, and it is a great soup on a cold, winter day.
Ingredients:
8 cups chicken broth
1 cup lentils, sorted and washed
3-4 medium carrots, sliced in ¼ in. wheels
½ medium onion, diced
2-3 stalks celery, diced
3 tablespoons uncooked rice
1-2 cloves garlic, minced
1 teaspoon Herbes de Provence or dried thyme
4-5 chicken tenders, cut in chunks (optional)
Directions:
- Stir broth, lentils, carrots, onion, celery, rice, garlic, herbs and chicken in your slow cooker.
- Cover and and cook on low 7-8 hours
- Enjoy
