Cauliflower au gratin v.1

Note: Kathy and I were trying to come up with something low-carb but with a little ambience. Here is v.1. This is enough for about two people. Adjust – there is very little magic in the quantities.

Ingredients

  • ½ head cauliflower, finely chopped
  • ½ 5 oz. pkg.  baby spinach
  • ¼ red bell pepper, finely chopped
  • 4-6 green onions, coarsely chopped
  • 4 tablespoons butter
  • ¼ cup half-and-half
  • 1 cup cheese (I like the Sargento Cheddar blend – pick one you like; if you like cheese, add more; if you like another cheese, go for it)

 

Directions

  • Combine ingredients in a bowl and toss
  • Place in a small baking dish (I used a medium loaf pan because it was available)
  • Pour half-and-half over the veggies
  • Cut butter into pats and scatter over the veggies
  • Cook covered in 350 degree oven for 45 minutes
  • Add cheese and let cook another 5-10 minutes uncovered
